WHere is a simplified take on a beverage found on a new drinks list. It's a party-sized premix that is bursting with the flavours of the Christmas time, making it ideal for hosting a holiday party. Save the extra citrus syrup you can use for morning drinks, puddings, or to mix another batch of bikinis.
The Bikini Cocktail
Serves 10 servings
To make the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Drink (makes 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Directions
Making the Cordial: Put the listed ingredients inside a saucepan, heat until it reaches a gentle boil, stirring until the sugar dissolves. Then, turn off the heat and leave to cool completely. Pour to a clean bottle, cap it keeping it chilled, it can be stored for about four weeks.
To make Cocktail Base: Pour the specified liquid ingredients in a large bottle, leave to sit for an hour, then filter it , ideally through muslin, so it's fully clarified.
To serve: Measure 85ml of the cocktail base to a stirring glass filled with ice, and stir lightly for a minute to cool it down. Pour into an cold coupe glass or equivalent, top with the cranberries and complete it using a brief mist of mandarin oil over the top.
